BLUE MARBLE TRAINING

Blue Marble Training was set up by Shoreditch Trust to manage the traineeships of aspiring eco-chefs at Acorn House and Water House Restaurants.

The Blue Marble programme provides an opportunity for trainees to work in the industry while being comprehensively trained to achieve NVQ Level 2 by experienced professionals in-house. In partnership with leading organisations in their field, Blue Marble seeks to offer trainees the extensive pastoral support network required to ensure their potential can be fulfilled.

In addition to the demanding work schedule within the restaurant, trainees participate in a number of activities designed to give them the broader experience and awareness that an eco-chef requires. Fieldtrips enable the trainees to get a clear understanding of food from field to farm to fork and beyond. This might involve getting face to face with the process behind organic meat or poultry down at the farm or even follow the journey of some restaurant waste in order to understand the true cost of what we throw away.

To widen their perspective beyond food, trainees are also expected to engage in some of the many Shoreditch Trust projects that are driving change in the local community.
